Established in 2015 in northwest Greater London, Bimber distillery started production in May 2016, boasting open American white oak washbacks for seven-day fermentations. Aged in casks once cradling 'Imperial Stout' beer, this expression showcases a rich golden yellow color. The nose is regal, with pineapple, rice powder, ripe apple, and Bourbon vanilla, evolving with aeration into dark chocolate, candied ginger, and fresh nuts. The lively palate harmonizes yeast and cereal notes with rustic and root-like flavors, transitioning into bitterness, spiciness, and a honeyed finish of lavender and acacia. The long, warm finish suggests a Normandy tart, with balsamic undertones and exotic notes of banana, kaffir lime, verbena, and sage.
