Founded in 2015 by Dariusz Plazewski, Bimber distillery employs Spanish-made, gas-fired stills—a 1,000-litre wash still and a 600-litre spirit still. This expression, initially bourbon-matured, concludes with a nine-month stint in an ex-Pedro Ximenez sherry cask.
