Hakkaisan Yukimuro (Snow Aged) 2019-2023 Bin Chozo Junmai Daiginjo 720ml 17.5%

Released in December every year, the sake brewed in 2019, commonly known as Aka Echigo (Junmai Daiginjo Nama Genshu), is aged in a bottle at low temperatures for four years in the huge snow chamber of Mt. Hakkaisan. It's sake. Unlike a refrigerator, snow room refrigeration has the advantage of maintaining a constant low temperature without small temperature changes, and it has been academically proven that storing alcohol in this way makes the taste of alcohol mellower.  Also, unlike tank storage, it takes up more storage space, but the method of packaging each bottle of sake and aging it at a low temperature is said to be ideal because there is less exposure to air. The fresh taste of freshly squeezed sake will gradually become rounder over time in the snow room, giving you a sense of just the right amount of ripeness.
