The Signatory Vintage Plume collection features two exceptional sherry cask-matured whiskies, including this Whitlaw 2013 from the Orkney Islands, produced at the Highland Park distillery. With a deep orangey copper color, the nose reveals a rich and unctuous character with notes of cocoa, apricot, orange, and beeswax. As it breathes, additional layers emerge, including incense, tar, floral (lilac, violet), and mineral (schist) tones. The palate is unctuous and elegant, showcasing red and black fruits, aromatic plants, and a delightful clafoutis. The finish is long and silky, transitioning into exotic fruit notes (mango, guava, persimmon) with a delicate minerality. The retronasal olfaction introduces nuances of salted butter caramel and the subtle flavors of a smoking Havana cigar, while the empty glass retains a camphoric, empyreumatic, woody, and liquoricey essence.
