In 2022, Waterford Distillery introduces its inaugural peated editions, a nod to tradition with 100% Irish peat. A return to the island's heating roots, this single farm release sourced from Ballybannon farm features barley and peat from County Kildare. With 47 ppm, the peated single malt exudes assertive smokiness, complemented by maritime, earthy, and pastry notes (lavender honey, apple pie, buttery). Gourmet and smoky on the nose with almonds, lavender honey, green apple, and peat smoke. The palate unfolds with pastry and smoky Frank peat, offering honey ice cream, apple-almond pie, and buttery notes with a touch of glasswort. The overall experience is long and delicate.
